I think I am at last getting the hang of it ... maybe. If you use a browser to read and write email, which a lot of people do, then you have an option for every message whether to compose using a full palette of styles, a dialogue box about whether to send as plain text and/or HTML and an option whether to display in plain text (which means the asterisks etc and no colour) or see the full palette of style.
