Martin,
Speaking from my own perspective only, I understand "multimodal" in this
context to refer to a qualitative research method attempting to understand
teaching and learning accomplished via a coordination of various modes,
e.g., talk, gesture, gaze, inscription...
Two recent events have coaxed me into this area: 1) a student has brought to
my attention the text, " Gunther Kress, Carey Jewitt, Jon Ogborn and
Charalampos Tsatsarelis (2001). Multimodal Teaching and Learning: The
Rhetorics of the Science Classroom. London and New York: Continuum."; 2)
I've begun a collaboration with David McNeill who is an expert in analyzing
talk, gesture, and gaze <http://mcneilllab.uchicago.edu/>...finally, it
doesn't hurt that, being an instructional designer, a central theme of this
research revolves around *design*...
I've found the following link to be an easily digestible introduction to
this term, along with related terms "multisemiotics" and "multiliteracies":

cles/Web_Article532
When I sent out the initial note about a symposium on qualitative methods,
quite a few mentioned their work in multimodality research...
Hope this helps to clarify!
Michael
