Interestingly, both Werner Herzog and Fedrick Wiseman, both prolific documentary fimmakes, have made documentaries about deaf blind people:

Herzog’s Land of Silence and Darkness about Fini Straubinger
And Wiseman’s Multi-handicapped about the Helen Keller School

I have the Portuguese version, and it seems to be the only one available. The quality is very bad, you can't hear the dialogue sometimes, and the translation is bad to say the least.
